About this item

‌Ethyl maltol is a white crystalline powder with a characteristic caramel aroma. CAS NO.:4940-11-8; MF：C7H8O3; MW：140.14 Solubility: 1 g dissolves in 65 mL of water at 15°C, and in 55 mL of water at 25°C. Ethyl maltol, as a flavor enhancer and aroma modifier, is increasingly used in a wide range of applications. It serves as an excellent flavor synergist in tobacco, food, beverages, flavorings, fruit wines, and daily cosmetics, significantly improving and intensifying the aroma of food products while also enhancing sweetness in confectionery. ‌Main Applications of Ethyl Maltol: 1.Aroma enhancement effect Significantly enhances the aroma of food products, such as tobacco, beverages, baked goods, and meat products, with an effect 3-8 times stronger than that of maltol. ‌When added to braised dishes, it helps eliminate off-flavors, enhance umami, remove fishy/meaty odors, and improve the consistency of the taste of frozen ingredients. 2.Flavor Optimization ‌Enhances sweetness perception, reduces bitterness and sourness, commonly used in dairy products (creamy texture) and baked goods (e.g., cakes). Mask unpleasant odors to make the flavor of food milder. Addition amount: usually 0.01%-0.05%. Excessive addition may mask the original flavor of the food. Recommended dosage (for reference only): Seasoning (chicken essence) 20-60mg/kg; Meat, fish (processed products) 60-130mg/kg; Soft drinks: 1.5-6mg/kg; For soups such as ice cream, frozen foods, jelly, and tomato soup, the dosage should be 5 to 15mg/kg. For chocolate coatings, candies, chewing gum and sweet pastries, the dosage is 30 to 50mg/kg. It can also be adjusted appropriately according to the product characteristics.
